Eating a low-saturated-fat, high-fiber diet helps with insulin sensitivity, according to a study published in the latest edition ofDiabetes Care. The study examined data from 518 healthy individuals between the ages of 15 and 20 enrolled in the Special Turku Coronary Risk Factor Intervention Project (STRIP) study. Participants were enrolled in the STRIP study during infancy and continually educated about dietary changes for heart health. Researchers encouraged a shift away from saturated fats and toward more fruits, vegetables, and whole grains, while assessing insulin resistance and monitoring overall health. Those who had higher fiber and lower saturated fat intakes showed better insulin sensitivity. This study illustrates that healthful eating practices introduced early in life have lasting effects and may prevent chronic conditions such as type 2 diabetes and heart disease.

Good quality, raw, dairy free (of course) dark chocolate is my weakness...I barely ever drink alcohol, don't have a T.V, don't drink coffee, don't eat sweets...but I LOVE dark chocolate. I could probably describe every dark, dairy free chocolate that's on our supermarket shelves. haha! This home made fudge chocolate is deeeeeeeeelicious! And so easy! If you like it more bitter like I do, just halve the sweetener (I used agave).

I don't know anyone who doesn't like laksa. This is a tasty vegan version. It took a while to find a paste which didn't have anchovy/fish sauce in it but there is one or two out there. I found mine at the organic store. Another good way to use up some vegetables you have and don't know what to do with. There's lots of room to experiment with this recipe.
