Start the new year with a salad!! Here's one! A delicious Summer salad full of fiber and protein with quinoa, spinach, strawberries, blueberries, peaches, mandarin oranges in a homemade Balsamic vinaigrette dressing. Take is to a BBQ and you may even make some new friends out of it!
Cute little mini desserts. Bottom layer is chocolate and walnut. Middle layer is coconut. Top layer is orange and raspberry. Super easy to make - just chuck the ingredients into a blender, layer it up and freeze! I find the silicon mini muffin trays are perfect for frozen desserts. Makes 24 mini muffin size desserts.
This soup has a s*** load of antioxidants, protein, fiber and healthy carbs to leave you sat-is-fied. Zero gluten making it super easy to digest and wont leave you feeling bloated. You could serve it with crunched up nachos on top or some nice bread...but it makes a pretty solid meal on it's own. Easy-peasy summer salad with a delicious dressing with just the right amount of kick. This makes quite a lot of dressing. Store it in a jar in the fridge and add it to the salad just before serving :)

On another note, I recently got my once yearly warrant of fitness from the doctor (cause apparently us vegans are more prone to getting sick....yea right). As usual, everything came back fine...my iron is actually on the higher side - probably due to the increase in green smoothies and spirulina tablets I've been taking to get me through exams. I want people to know that this isn't unusual for a vegan. There is a huge misconception out there that vegans are lacking in something as a matter of course. I keep a closer eye on my B12 levels but even so, I have had no indication of needing to supplement in this.
I don’t take any supplements or vitamins. I just eat really well. I used to take a lot of them and when I stopped, nothing bad happened so I just never started taking them again. I think it’s important for people to know they don’t "have" to take vitamins and supplements if they already have a good diet made up of whole, natural foods.
In a recent survey 89% of tomatoes claimed this pasta sauce is the way they'd like to go. And the avocado sauce is so creamy, that the word "creamy" isn't even creamy enough to describe it's creaminess.
