If you haven't done the avocado mousse trick yet, you are missing out - haha! It's so easy! Blending avocado with cacao and a natural sweetener makes a super smooth, velvety mousse that everyone will love. And it's healthy (so long as you don't put too much sweetener in it)! Today I experimented and made an almond and banana base to turn it into a luscious slice/dessert. Mmmmm......
Base Ingredients
1 cup raw almonds
1/4 cup melted coconut oil
1 banana
1/4 cup cacao (I used a mixture of cacao, lucuma and maca)
3 Tbs Agave or other sweetener
Pinch of Himalayan sea salt
1/2 cup shaved coconut
Prepare a baking dish by lining it with baking paper.
Place the almonds in a food processor and blend until the almonds are roughly chopped. Add the rest of the ingredients and blend until fully combined. It should be sticky - not too runny. Press mixture evenly into the bottom of your baking dish.
Place in the refrigerator.
Mousse Ingredients
4 ripe avocados
3/4 cup melted coconut oil
1/2 cup raw cacao
1/4 - 1/2 cup agave or other sweetener (depends on how sweet you want it. You can always start with 1/4 cup and add more at the end if you are unsure)
1 Tbs organic Vanilla Extract
Pinch of Himalayan sea salt
Blend in a blender until smooth and fluffy. Remove base from the refrigerator (it should be starting to become more solid) and scoop the mousse onto the top. Spread evenly then place back into the refrigerator. It should be firm enough to cut into slices within an hour or so.
