Cardamom quinoa porridge

Another breakfast idea, though today this is my pre-workout eats since it looks to be a long workout this evening! Looking forward to it :) Quinoa porridge is a nice change to oats and easier on the digestive system.

Ingredients:
  • 1/2 cup rinsed quinoa
  • 1/2 cup coconut cream
  • 1/2 cup water
  • 1/2 tsp organic vanilla extract
  • 1/4 tsp coarse salt
  • 1/4 tsp ground cardamom
  • 1/4 tsp all spice
  • 1 tbs liquid sweetener (I used maple syrup)
  • Non dairy milk, fruit and nuts to serve

  1. In a saucepan, bring quinoa, coconut cream, water, vanilla, salt, and cardamom to a boil. Reduce heat and simmer, covered, until liquid is absorbed, 15 minutes.
  2. Remove from heat and let rest five minutes, then fluff with a fork.
  3. Serve with non-dairy milk, fruit and chopped nuts.
