Another breakfast idea, though today this is my pre-workout eats since it looks to be a long workout this evening! Looking forward to it :) Quinoa porridge is a nice change to oats and easier on the digestive system.
Ingredients:
- 1/2 cup rinsed quinoa
- 1/2 cup coconut cream
- 1/2 cup water
- 1/2 tsp organic vanilla extract
- 1/4 tsp coarse salt
- 1/4 tsp ground cardamom
- 1/4 tsp all spice
- 1 tbs liquid sweetener (I used maple syrup)
- Non dairy milk, fruit and nuts to serve
- In a saucepan, bring quinoa, coconut cream, water, vanilla, salt, and cardamom to a boil. Reduce heat and simmer, covered, until liquid is absorbed, 15 minutes.
- Remove from heat and let rest five minutes, then fluff with a fork.
- Serve with non-dairy milk, fruit and chopped nuts.
