Make your own vegan & healthier version of Bounty at home! This recipe comes straight from Elephantastic Vegan; a website full of delicious healthy food. These soft, delicious coconut bars coated with dark chocolate are the perfect dessert. I haven’t eaten a “real” Bounty in a long time, so my memory of it is rather blurry but I think this version is softer and I love it that way, but if you want to make them a bit firmer just add a bit less coconut milk and more coconut oil. I also recommend buying organic coconut - it seems to have a lot more flavour.

Yay it's feijoa season!! Lucky me (and my flatmates!) since my mum sent us a HUGE box of feijoas from her tree - thanks mum! So far we've had feijoa cake, feijoa vodka (couldn't resist), feijoa jam....and now, raw feijoa dessert. Chocolate and feijoa have got to be one of my favourite dessert combos.

Cute little mini desserts. Bottom layer is chocolate and walnut. Middle layer is coconut. Top layer is orange and raspberry. Super easy to make - just chuck the ingredients into a blender, layer it up and freeze! I find the silicon mini muffin trays are perfect for frozen desserts. Makes 24 mini muffin size desserts.
I've been experimenting with raw desserts that don't use so much coconut oil and voila!...it is possible and they still taste delicious! This slice uses almond and coconut flour in the base, has a citrus avocado center and a smooth chocolate topping. Enjoy :)
A quick, easy recipe for some dairy free, creamy ice blocks (cause that's what we call them in New Zealand) :) If you want to get fancy, you could melt some chocolate and drizzle it around the inside of the ice block moulds before adding the mixture so you end up with chocolate coated ice blocks.
Mmmm...I had never though to add herbs to my cookies until now but it totally works! A bit of rosemary, cayenne and chocolate makes the most amazing spicy sweet cookie I think I've ever had. Golden on the outside, chewy on the inside. Mmmm....definitely keep it as a treat though ;)

Mind being blown by this amazing Pumpkin Pie Rob just made. Another awesome recipe from Plant Powered Kitchen! I was doubtful since I don't really like pumpkin and it looked a bit like baby turd when he was making it...but Rob assured it was only 70% pumpkin and the other 30% contained strong spices....and there's no babies in the house so I took a punt. SO glad I did - it's DEEEEEELICIOUS! We served it with vegan icecream (frozen bananas blended with frozen berries). If you are using a whole pumpkin, you'll need to cut the pumpkin up, roast it, then puree in a blender. Totally worth the effort!

This has definitely been one of my more successful vegan cakes I've made...maybe even the most successful! It's nice and light - and all your non-vegan friends will not even guess there's no dairy or eggs in it. It's nice and simple to make. If you want an extra treat, top it off with the peanut butter & coconut cream frosting :)
I found another great website for food inspiration http://www.veganricha.com/, so I took it for a test drive by making their delicious mocha cookies. They turned out awesome! No baking powder, baking soda or unnecessary ingredients - they are nice and simple and take no more than 10 minutes in the oven :)
If you haven't done the avocado mousse trick yet, you are missing out - haha! It's so easy! Blending avocado with cacao and a natural sweetener makes a super smooth, velvety mousse that everyone will love. And it's healthy (so long as you don't put too much sweetener in it)! Today I experimented and made an almond and banana base to turn it into a luscious slice/dessert. Mmmmm......
I've had zucchini coming out my ears recently(!) so I've been trying to come up with new ways of using it. Here is a rather experimental "cheesecake" which turned out great! Using soaked cashews and avocado as the base for the filling, it turned out a beautiful creamy texture that you get in an ordinary cheesecake but without the dairy and with all the amazing health benefits that come with eating nuts and avocado. The flavour is a vanilla/lemon combo. It's very easy to make - your food processor does more of the work for you! Enjoy :D
This is a straight copy and paste recipe because it is sooooo good all on it's own. These cookies are so simple to make and bake. Divinely soft on the inside and most delicious warm when the chocolate is still soft. No need for eggs, dairy, sugar, oil or flour and completely gluten free. Enjoy.
A delicious raw dessert made with goodness of avocados. The bottom layer is divinely chocolate and the green layer is made with fresh limes. This is a dessert you don't have to feel guilty about! It would also be scrumptious served with some fresh berries.
Cool it worked! First time I've ever made a cakes based on potato and it totally worked. I was pleasantly surprised at how good the mixture tasted and it's a perfect brownie texture. I made this brownie recipe into a cake and just baked it for 10 minutes longer. The other cool thing is there's no sugar in it! And it's gluten free! This was a birthday cake for a non-vegan/non-health-nut friend, so I topped it with some ridiculously unhealthy, rich vegan frosting. Ordinarily, I'd skip the icing and have it on its own. Enjoy :)
I had never thought of mixing zucchini and pineapple before but it was WELL worth it.
First time making cookies with no flour...and to my surprise, they turned out quite good! Though I baked them for a couple minutes too long so turned out a bit browner than I would have liked ;) These would even suit all the clean eaters out there! Gluten free, dairy free, vegan, soy free, egg free, nut free.
