Easy to make Asian style salad with Shiitake mushrooms

This is a nice light salad with a bit of a kick to it. It's fast to make and the shiitake mushrooms are crazy good for you too. Studies have found antitumor, cholesterol-lowering, and virus-inhibiting effects in compounds in shiitaki mushrooms....more about their beneficial properties below.

Ingredients


1 bag of mixed greens of your choice

1 TBSP coconut oil, melted (could use olive oil if you don't have coconut oil)

4 small carrots, sliced thin 

7 oz shiitake mushrooms, brushed clean and sliced (Be sure to use a dry dish or paper towel to scrub clean, never wet your mushrooms because they will absorb all water become mushy)

2 cloves of garlic, minced

salt & pepper

A can of sliced water chestnuts (optional)

1/2 cup pistachios or other nuts (optional for some added crunch)

1 c chopped bok choy

1 c shelled edamame (optional)

1 c chopped broccoli 


Spicy Asian Dressing:

1.5 TBSP toasted sesame oil

1 TBSP rice vineger

1 tsp sriracha or hot sauce

1 tsp honey or agave

1 TBSP chives, chopped

1 tsp tamari or low sodium soy sauce

1/2 tsp pepper

1.  Place the mixed greens in a large bowl and set aside. In a small bowl combine all salad dressing ingredients and whisk together well and set aside.

2. Melt the coconut oil in large sauté pan over medium heat. Add the garlic and sauté for about 30 seconds or until fragrant (careful not to burn the garlic). Add the mushrooms, season with salt and pepper and sauté for about 5 minutes.  Add the sliced carrots, broccoli, edamame, nuts, waterchestnut and broccoli to the pan. Saute for a few more minutes. Mix  together well, turn off heat, and set aside.

3. Assemble the salad. Toss the greens in the asian vinaigrette until well coated. Add the warm mushroom/greens mixture  over the top. You could serve it on it's own or with some rice or noodles. I used buckwheat noodles :)

3. Prevents Cancer
The compound lentinan not only helps boost your immune system but can also help prevent cancer. According to studies, lentinan promotes several anti-cancer activities. It can reduce the growth of cancerous cells and prevent the spread of existing ones. The compound also stimulates your immune system to release proteins and cells that destroy cancer cells. Gastric cancers in particular can be prevented by regular consumption of shiitake mushrooms.

4. Prevents ThrombosisConsuming shiitake mushroom oil has also been shown to effectively prevent thrombosis. Thrombosis is a health condition that produces blood clots in your veins which leads to restricted blood flow. If you’ve ever gone on a long-haul flight where you had to sit for long periods of time without activity, then chances are you have experienced this disorder. Thrombosis usually occurs in the veins of the legs and can be quite painful. Shiitake mushrooms contain high levels of lenthionine, which prevents platelets from aggregating.

5. Rich in Iron
Shiitake mushrooms are rich in iron, a mineral which is essential for maintaining good health. Iron improves the circulation of oxygen through your blood. As a result, oxygen and other nutrients are effectively supplied to your muscle cells, brain and other parts of the body. Iron is also used to treat anemia, so if you are anemic as a result of menstruation or pregnancy, make sure you incorporate plenty of shiitake mushrooms into your diet. Iron can also boost your energy level and prevent fatigue.

6. Aids in Weight Loss
If you are currently trying to lose weight, shiitake mushrooms make a great diet food. Not only do they contain a small amount of calories, but they are also packed with plenty of dietary fiber. Dietary fiber slows down digestion so you feel full for a longer period of time.
