Mamma's mix

One benefit of mum having a plant based vegan diet now is the yummy food she has in the cupboard when I visit! Found this last time I visited...had it every day for breakfast in place of muesli. So if your breakfast muesli has become ho-hum, try this instead, or just sprinkle it on top to make your normal muesli more interesting. Recipe makes heaps :)

Heat oven to 180 degrees Celsius. 
In a large bowl:
  • 2c "power and go mix" available at the bulk bins at New World (or 1c flax seeds, 1/2c sesame seeds, 1/2c diced dried fruit) 1/2c chopped mixed nuts
  • 1/2c pumpkin seeds
  • 1/2c sunflower seeds
  • 1/2c chia seeds
  • 1/2c chopped peanuts
  • 1/2c puffed millet
  • 1/2c quinoa
  • 1/4c diced crystallized ginger (optional but highly recommended)
Mix and spread on a baking tray lined with baking paper.

Warm in a small bowl in the microwave or small pot on the stove:
  • 1/4c peanut butter, and
  • 1/3c maple syrup
Drizzle over mixture on the tray. It doesn't need to cover all of the mixture...it's quite nice finding tasty clusters of mixture when you are eating it.

Roast for approx 15 minutes. Keep an eye on it... May need a stir once or twice :)

Serve with non-dairy milk, coconut yoghurt and fresh fruit.
