Noodles with avocado & kale pesto

Avocado's never fail me. I'm obsessed with avocados. They contain an amazing array of carotenoids. They are also anti-inflammatory. They help digestion, are high in vitamin K, fiber, folate and vitamin C. Avocados are also high in fat but it is considered to be the good fat that helps you absorb nutrients, protects you from inflammation, and helps lower your risk of heart disease. This pesto is super fast and super tasty. If you want to make it a 100% raw dish, make zucchini noodles instead :)

Ingredients
  • 1/2 - 1 packet of noodles (any kind will do)
  • 2 avocados
  • 1/4 cup cold pressed olive oil
  • 2 cloves garlic, crushed
  • 1/4 cup nutritional yeast
  • 1/2 cup pine nuts
  • 1 small bunch kale, de-stemmed and torn into small pieces (about 2 handfuls)
  • Juice from 2 lemons
  • pinch Himalayan salt and fresh cracked pepper
  • Kernels from 1 corn
  • 1 red capsicum, chopped finely
  • 2 tomatoes, chopped 

Directions
  1. Cook noodle as per packet. Strain and set aside.
  2. In a food processor, add avocado, olive oil, nutritional yeast, garlic, pine nuts and lemon juice. Pulse until blended.
  3. Add kale and pulse until well chopped and incorporated.
  4. Season to taste with salt and pepper, then toss with the zucchini noodles, capsicum and tomatoes.
  5. Serve cold or warm.
