Makes about 20 pieces
Base Ingredients
1.5 cups oats
1.5 cups shaved coconut
3 tbsp chia seeds
2 tbsp maca powder (optional)
20 figs, soaked for 3 hours or more, chopped
1/4 cup water (can use the water that the figs have been soaked in)
2 tbsp lemon zest
Topping Ingredients
1 cup shaved coconut
4 bananas
Zest and juice of 3 lemons
2 tbsp coconut oil
2 tbsp agave nectar (or maple syrup or apple syrup)
1 tsp vanilla extract
Directions
Line a large baking dish with baking paper.
Place all the dry ingredients into a food processor and blend until well combined and a bread-crumb type texture. Add the figs and lemon zest and blend. Add water slowly until the mixture starts to form a dough or ball. Press into the baking dish and place in the freezer.
Put all the topping ingredients into the food processor or blender and blend until smooth. Take the base out of the freezer and pour the topping over it. Spread it around evenly and place back in the freezer.
The slice should be firm enough after around an hour, to slice into squares. Store in an airtight container in the freezer.
