Due to our supermarkets (visited 3!) selling only piddly sized zucchini and ridiculously expensive eggplants, I wrapped it in something else. So as an alternative you can wrap the mixture in raw wraps from the health store or if you are feeling naughty, cannelloni. You can still keep the filling and the tomato sauce raw by cooking the cannelloni first. DON'T RUIN IT by adding CHEESE!
This was a super filling and tasty dish for a cold day. I warmed the filling slowly at a very low temperature so as not to destroy the nutrient content...just enough to warm the belly. mmmm....
