1c Organic Red or Black Rice
1c Organic coconut cream
2 tbs liquid sweetener (I used maple syrup)
1 tsp cinnamon
1 tsp raw cacao (optional)
Fruit to serve
Soak rice overnight.
In the morning, rinse and drain rice.
In a saucepan, put all the ingredients apart from the fruit. Bring to the boil then turn temperature down and simmer, covered, for around 15-20 minutes. Stir every few minutes while it is cooking. Take off the heat and let cool slightly.
Serve with fruit of your choice.
