This recipe couldn't be more simple. Again, not something you should eat every day! haha. I made them gluten free by using buckwheat flour and 1tsp of guar gum.
Ingredients:
3/4 cups creamy peanut butter
1/3 cup Earth Balance Buttery Spread (I used coconut oil)
3/4 cup sugar (I used 1/2 cup coconut sugar)
1/2 cup almond milk
1/2 tsp vanilla extract
1/4 tsp salt
1 tsp baking powder
2 cups flour
1/2 cup vegan chocolate chips (I used an 70% Lindt bar chopped into chunks)
Mix everything together. Form small balls dip in sugar and place on cookie sheet.
Bake at 180 degrees Celsius for 10-12 mins.
