I think I've had a craving for french toast for about the last 5 years. I have sporadically looked for recipes but nothing took my fancy. This morning I thought I'd re-visit the idea. Basically, I figured all you need is a thick, fry-able mixture to dip the bread in, that is obviously egg free. So I chucked some stuff in a blender and voila - it worked! A nice, banana/spice fried toast. Topped with fresh fruit, coconut yoghurt, nuts, seeds and maple syrup, it's an excellent winter breakfast. Enjoy. (Makes 6-8 slices)

- 2 ripe bananas
- ¾ cup of soy milk (or other non-dairy milk)
- 1 tsp of vanilla
- ½ tsp of cinnamon
- ¼ tsp cardamom
- 1 tablespoon ground chia seed or ground flaxseed
- 6-8 slices of thickly sliced bread (even better if it is a little bit stale!)
Directions:
- In a blender, place all of the ingredients (apart from the bread of course!). Blend until smooth.
- Pour mixture into a square dish to be able to dip the bread into.
- Heat a non-stick frypan to a low-medium heat with a small drizzle of oil or non-dairy butter.
- Dip one piece of bread at a time into the smoothie mix then place into the frypan. Fry for around 2 minutes each side until golden. Repeat, repeat, repeat!
- Serve warm, with fruit, berries, coconut yoghurt, nuts, seeds, maple syrup or any other toppings you can think of.
